Description
Liquorice (Glycyrrhiza glabra) is the root of a perennial leguminous plant that grows mainly in sunny, dry areas around the Mediterranean and in parts of Asia. The plant forms long taproots in which the natural sweetener glycyrrhizin is stored — responsible for its characteristic, intensely sweet taste.
The flavour of liquorice is warm and full-bodied, with a slight hint of caramel and aniseed. Its aroma is soft and spicy, making it a popular ingredient in countless tea blends and herbal infusions. The dried root can be steeped in pieces in tea or combined with other ingredients.
