Description
Valerian (Valeriana officinalis) is a perennial plant from the honeysuckle family (Caprifoliaceae) that grows in large parts of Europe, Asia and North America. It thrives in moist, chalky soil and can be recognised by its graceful pinnate leaves and small, pale pink flower clusters that bloom from June to August.
The rhizome of the valerian plant has a distinct, earthy scent and has been valued as an aromatic herb since ancient times. In medieval monastery gardens, valerian was known as a plant with protective symbolism: it was believed that its scent could dispel 'evil vapours' and bad dreams. The root was therefore used not only in tea, but also in scented sachets, herbal pillows and household altars.
As an herbal tea, valerian has a full, earthy flavour with warm, spicy notes. The herb combines well with chamomile, lemon balm or hop blossom to create a distinctive, rustic infusion with a recognisable scent.
