Tamaryokucha can be produced using two methods: steamed (mushi-sei tamaryokucha) or pan-fired (kamairi tamaryokucha). The steamed version is similar to the method used for Sencha, but with a different finish where the leaves are not rolled flat, but lightly twisted. The pan-fired version, on the other hand, is roasted in a pan instead of steamed, which gives it a unique flavour and aroma. The Tamaryokucha we offer is pan-fired and has a slightly sweet, slightly nutty, deliciously full flavour.
