Description
Rosemary (Rosmarinus officinalis), a classic Mediterranean shrub that grows naturally on sunny slopes along the coast, has been known for centuries for its powerful fragrance and characteristic needle-shaped leaves. Throughout southern Europe, rosemary played a symbolic role: it was associated with memory, fidelity and protection, and was used both in the home and on ceremonial occasions because of its intense aroma.
For tea blends, the needles are lightly dried and used uncut. This allows them to retain their full, resinous fragrance with subtle spicy and woody undertones. In small quantities, rosemary adds a warm and aromatic accent to herbal teas, especially when combined with citrus, mint, thyme or lavender.
