Description
Hawthorn (Crataegus spp.) is a thorny shrub from the rose family that occurs naturally in hedges and forest edges in Europe and Western Asia. In spring, the plant blooms with small white flowers, which are harvested together with the young leaves and carefully dried.
The scent of hawthorn is slightly spicy and floral; the taste is soft, round and slightly sweet with a hint of almond and wild flowers. This makes it a refined base for herbal teas or gentle evening infusions, possibly in combination with lemon balm, lime blossom or camomile.
