Whereas normally only the coffee bean is used for roasting coffee, in countries such as Ethiopia, Yemen and Latin America, the rest of the cherry is traditionally processed into a mild and surprising infusion. Cascara combines a light fruity, mildly sweet aroma with subtle notes reminiscent of raisins and dried apricots. It naturally contains caffeine, but significantly less than coffee, making it a pleasant choice for those seeking a milder form of stimulation.
