Butterfly pea blossom (h)

The flowers of the butterfly pea turn a beautiful blue when you pour boiling water on them. And then if you add a little acid, say from a lemon or lime, the color turns into a wonderful magenta.

The taste is somewhat difficult to describe. Slightly spicy, slightly vegetable-like, reminiscent of spinach somewhere.

And for the hospitality people, something for an iced tea perhaps? Nice syrup through it, slice of lemon next to it? We’re going to do some experimenting of our own!

This flower is also known as Butterfly Pea Flower, kittel flower, blue tea, Blue Chai. The botanical name is Clitoria ternatea.

Ingredients: butterfly pea blossom

Brewing advice: about 5 florets in a cup, 20 florets in a jar (glassware is nicest, of course), pour on boiling water.
